This is a great Baked Potato Soup recipe. Tasty fresh, or when nuked as leftovers.

Ingredients

  • 4 large Baked Potatoes
  • 2/3 cup Margarine or Butter (we use Olive Oil)
  • 2/3 cup Flour
  • 6 cups Milk
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1.5 cups Cheddar Cheese (shredded)
  • 12 slices cooked Bacon
  • 4 Green Onions (sliced and diced)
  • 1 small carton Sour Cream

Directions

  • Bake the Potatoes
  • Scoop the Potato out of the skin
  • In dutch oven, melt the Margarine (or Butter, or Olive Oil) on Low heat
    • Add the Flour and stir until smooth
    • Add the Milk
  • Raise the heat to Medium
    • Stir until the mixture thickens and bubbles
  • Stir in the rest of the ingredients (except Sour Cream)
  • After all ingredients are blended, stir in the Sour Cream

Serve hot.

Approximately 4 servings.
